The new jewel in the crown of David Bottreau, illustrious owner of the renowned Comptoir des Fables and Christian Constant’s right-hand man, Bistrot des Fables blossoms on the site formerly occupied by Café Lignac, rue Saint-Dominique. We’ll be carrying on the long-established tradition of the Parisian bistros that preceded it. Once upon a time…

The story of Fables de la Fontaine began in 2004 when Mr. Constant purchased this establishment to turn it into a small fish restaurant. After an evening spent together searching for a restaurant name related to the Fontaine de Mars, the name “Table de la Fontaine” was chosen, and later “Fables de la Fontaine” was adopted for a playful wordplay.

In 2006, I partnered with Mr. Constant, and he allowed me to manage this establishment. Two months later, we were awarded a Michelin star, which lasted for 12 years. This name means a lot to me due to the history with Mr. Constant, who is like a spiritual father to me and who greatly assisted me in my journey as a young owner at the time. Le Comptoir des Fables was born in 2019, and the Bistrot des Fables in 2023.

Guillaume Dehecq is the chef of Le Comptoir des Fables and Le Bistrot des Fables (Paris 7th). Having trained in iconic establishments such as the George V, Le Fitzgerald and L’Ami Jean, he has developed a refined, demanding and clear-cut style of cooking, where every detail matters. In 2025, he was awarded a Michelin Bib Gourmand for Le Bistrot des Fables.

His signature : precision with perfectly judged cooking, carefully crafted sauces and reductions, clean, balanced pairings, and no unnecessary flourishes. A contemporary French cuisine that is precise, generous, and designed to put the product at the centre of the plate. Day to day, he leads a seasonal menu shaped by the market’s arrivals, with particular attention to the origin and quality of each ingredient. An author’s cuisine elegant and sincere focused on what matters most : the product and the pleasure of eating.
